Just one point though. Are you sure that the quote about "I have more faith in a shadow..." is genuine? I suspect it was invented in "a history of the warfare of science and religion" or some such equally dubious source.
Almost all educated people in the middle ages believed the earth was spherical - including clerics. The idea of the flat earth was notoriously and mischievously invented by Irving Washington and others in the 1830s. Pythagoras was the first deduce the shape of the earth in the 6th century BC from its shadow - Eratosthenes measured its radius in the 3rd century BC to within 5%. Mediaeval astronomers, many of whom like Copernicus were clergy, were well aware of this. They discussed with Columbus the radius of the earth and argued correctly on the basis of Eratosthenes figure that the earth was too big for Columbus to reach China. He only survived because he stumbled across the West Indies. No mention was made of falling off the edge of the earth.
Given this I don't think the quote can possibly be genuine.
Thought it might save you some embarrassment if you withdraw the shirt.
